The other weekend my friend, Lori, posted a recipe for Matcha Pops!
I didn’t have all the ingredients but I had to make them, so I improvised and made some slight adjustments.
They were sooooo good and I had to text Lori…then I texted all my matcha-loving friends and family.
When you find something amazing, you MUST share it!
I have a set of desert plates with cats on them. 😜 Of course I do!
Here's a pic of one Matcha Pop on a plate, with a dollop of red strawberry jam on the side.
Lori actually mixed homemade strawberry curd into her pops.
I overfilled my molds and couldn’t swirl it in.
I have to say, the strawberry jam added a surprising dimension and brightness to the already delish creamsicles!
If You're Not a Matcha Fan
If you're not a matcha fan it could be because the times you’ve tried it, the matcha was too overpowering and bitter. The amount in this recipe it perfect and I think could sway you over to the matcha side.
If You Haven't Tried Matcha Before
If you haven’t tried it before or don’t know much about matcha, matcha is a powder made from green tea leaves.
Many people love it for the taste but even more love it for the health benefits as matcha is known to be a superfood-antioxidant.
There’s also research in other benefits such as improving cardiovascular health, anti-cancer properties, weight loss, and skin health.
So here it is, the adapted version!
- 1 can coconut cream
- ⅔ cup coconut milk (either from a can or carton; I used unsweetened coconut milk from a carton because it’s what I had)
- ⅔ cup pure maple syrup (one that doesn’t have any added sugars)
- 2 tsp matcha powder
Blend all the ingredients and pour into your molds, freeze and enjoy!
💌 Love Note:
💗 I had extra mixture and not enough molds so I just added ice to it and blended it for a yummy Matcha Frapp! Sooo good!
💗 I also used this same recipe to make fudgesicles! I just replaced the 2 tsp of matcha powder with 2 TBSP (rounded) of raw cacao powder and a pinch of Himalayan salt. If you need a reason to try this version, do it for the health benefits! Raw cacao powder has 40 times the amount of antioxidants as blueberries and is an anti-depressant!!
Chery was one of the friends I texted (this miracle story involving her cats is one of our most popular blog posts), immediately made the creamsicles too, and here’s her result…with her cat Duncan!
